Apple Sauce



Apple sauce is a basic puree of stewed apples. Although naturally sweet, sugar or honey is usually added as well as the very popular cinnamon and allspice combo. The additions mentioned complement the apples really well and create a warm and comforting taste. The goal is always apple sauce that is sweet and tart with a nice consistency. Although making sauces with apples dates back to medieval Europe, it isbelieved that apple sauce goes back to the mid-1700s. It was a way to preserve apples since there was no refrigeration. The first mentionedapple sauce recipe was in Eliza Smith’s 9th edition of Compleat Housewife. The recipe was paired with one forduck. Apple sauce does agreat job at taking away from the fattiness of meats including duck and pork but works with leaner meats as well. Along with cutting some of the fat, it counteracts saltiness to create a well-balanced plate.

  • 2 lbs. apples, a combination of Granny Smith, Golden Delicious, and McIntosh is very tasty
  • 1 orange peel
  • 1 lemon peel
  • ½ cup unsweetened apple juice
  • 2 tablespoons brown sugar
  • 1 ½ teaspoons cinnamon or to taste
  • Pinch of allspice
  • Pinch of salt

How to Make !!!!?

!!!! Sauce – Step by Step Instructions:

1. Core the apples and quarter. You may choose to peel them or leave the skins on for this apple sauce recipe (they add more nutrients).
2. Toss in the orange peel, lemon peel and pour in the apple juice.
3. Add the sugar, cinnamon, allspice, salt, and stir.
4. Bring to a boil over high heat and reduce to a simmer.
5. Simmer for 15-20 minutes or until apples are tender and cooked through.
6. Remove the citrus peels.
7. At this point, you can either mash the apples to make the sauce or transfer to a blender or food processor if you want a smoother consistency.
8. Taste and add more cinnamon and/or sugar if desired.

You can even toss in a whole cinnamon stick, ground ginger or a fewcloves. Roasting is another cooking method for those wanting applesauce with a different texture and deeper flavor.
