Stroganoff sauce is a rich, hearty sauce consisting of beef, mushrooms, onion, garlic, sour cream and a few other ingredients to achieve its signature taste. The dish in its entirety dates back to the 19th century although it’s often seen as a dish of the 1950s. Some say beef stroganoff is an old family recipe of Count Pavel Stroganoff’s, who was a dignitary, member of the Imperial Academy of Arts and known gourmet. It is said that his love of entertaining introduced many to the dish. No one really knows if a member of the Stroganoff family invented beef stroganoff but it has another connection to the Stroganoffs. Beef stroganoff was entered and won first place at L’Art Culinaire. The dish was presented by Charles Briére who was an employee of the Stroganoff family. In 1934, beef stroganoff was featured in an American cookbook for the first time and was a big hit in the 50s.

Stroganoff Sauce Ingredients

  • Olive or vegetable oil
  • 2 ½ cups chopped fresh mushrooms
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 1 ½ lb. beef sirloin steak,
    cut in ¼ inch thick strips
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 1 ½ cups beef broth, reduced sodium
  • 1 ½ teaspoons Worcestershire sauce
  • Salt
  • Black pepper
  • 1 ½ cups sour cream

How to Make Stroganoff Sauce?

1. Drizzle a tablespoon of olive oil into a skillet and heat over medium.
2. Add the sliced mushrooms, onion and garlic.
3. Cook while stirring for 5-7 minutes or until tender.
4. Remove from the pan and set aside.
5. Add another tablespoon of oil and increase the heat to medium high.
6. Transfer the beef to the same skillet used to cook the mushrooms and cook until brown.
7. Remove from the pan and set aside.
8. Melt the butter over medium heat and stir in the flour to make a roux. Be sure to scrape the bottom of the skillet to loosen the beefy flavor bits.
9. Slowly add the beef broth while stirring once a golden roux forms.
10. Add the Worcestershire sauce, some salt and black pepper.
11. Return the mushrooms, onions, garlic and beef to the skillet.
12. Bring to a boil and reduce to a simmer.
13. Simmer for 15-20 minutes or until thickened.
14. Remove from the heat.
15. Stir in the sour cream.
