  • 3 egg yolks, room temperature
  • 1 ½ cups extra virgin olive oil
  • Fresh lemon juice, to taste

1. Using a mortar and pestle, grind the garlic and a generous pinch of salt until a thick paste forms.
2. Transfer the paste to a glass bowl.
3. Stir in the egg yolks.
4. Leave to sit for 5-7 minutes. This helps meld the flavors.
5. Whisk constantly and vigorously as you slowly add half the olive oil (add the oil very slowly).
6. As the sauce thickens, add the remaining oil in a slow stream as you continue to whisk.
7. Once the sauce is very thick, season to taste with lemon juice and salt.
8. Enjoy immediately or store in an airtight container and refrigerate.
