Homemade Alfredo Sauce Recipe

Fettuccine Alfredo Sauce Authentic Italian food is minimal so the ingredients can speak for themselves. You may be used to having alfredo made with flour, cream and/or milk but the original sauce included a mere 2 ingredients, three counting the pasta. As you have probably guessed, alfredo was invented in Italy. Alfredo di Lelio, who owned a restaurant on the Via della Scrofa in Rome, created alfredo sauce. When his wife Ines was pregnant with the couple’s second child she couldn’t keep food down due to nausea. di Lelio made the sauce for his wife, tossed some fettucine pasta in the sauce and Ines ate the dish regularly. Soon after inventing the sauce Alfredo decided to serve the dish at his restaurant. It was not big in Italy but after silent film stars Douglas Fairbanks and Mary Pickford dined at the restaurant in 1920, they asked for the recipe, brought it to the U.S and spread the word. After sending di Lelio various gifts to express their gratitude, reporters began talking about the actors and their connection to Alfredo di Lelio. Soon after, the Hollywood elite frequently dined at Alfredo’s restaurant while vacationing in Rome and it became a well-known tourist spot. Today, you can find alfredo at almost any Italian eatery but why dine out when you can make authentic alfredo sauce at home?

Alfredo Sauce Ingredients

  • 1 lb. dried fettucine
  • 2 sticks butter
  • 3 cups freshly grated parmesan cheese
  • Salt
  • Black pepper, to taste (optional)

How to Make Alfredo Sauce?

Easy Alfredo Sauce Recipe – Step by Step Instructions:

1. Bring a pot of water to a boil over high heat.
2. Generously salt the water when boiling.
3. Add the fettucine and stir.
4. Cook for 7-9 minutes or until al dente (the pasta should retain some bite).
5. Reserve ½ cup pasta water and drain the pasta.
6. Melt the butter in a large pan over medium low heat.
7. Add the pasta followed by the parmesan cheese and toss.
8. Add pasta water as needed to evenly coat the pasta. You may not need it all.
9. Season with black pepper if desired.
10. Serve immediately.

Alfredo sauce is best served with fettucine. The sauce is simplicity at its finest and is really made for pasta. Although true, melted butter and parmesan can be paired with many foods.
