  • 2 jalapeno peppers
  • 1 ½ lbs. tomatillos, husked
    and quartered
  • 2 poblano peppers, roasted
    and peeled
  • 1 handful of fresh cilantro, chopped
  • 4 cups chicken broth, reduced sodium
  • Vegetable oil
  • 1 onion, minced
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 1 tablespoon granulated sugar
  • Salt
  • Black pepper

How to Make Green Enchilada Sauce?

Green Enchilada Sauce Recipe – Step by Step Instructions:

1. Place the tomatillos, poblanos, jalapenos and cilantro in a blender.
2. Pulse until smooth. Pour in chicken broth as needed to achieve a smooth consistency. You will need about half.
3. Set this aside.
4. Drizzle a tablespoon of oil in a large saucepan and heat over medium.
5. Add the onion and garlic.
6. Sauté while stirring until the onions cook down and the garlic is fragrant.
7. Sprinkle with the cumin and cook while stirring for an additional minute or so to wake up the spice.
8. Pour in the pureed tomatillo mixture while stirring along with the remaining chicken broth.
9. Add the sugar.
10. Season with salt and black pepper.
11. Stir and increase heat to medium high.
12. Bring to a boil and reduce to a simmer.
13. Simmer for 25-30 minutes or until the desired consistency is achieved (some like a thinner sauce while others want a thick sauce).
