Harissa sauce, also referred to as a paste, is made from chili peppers, an array of spices and oil. Although a sauce, harissa is often used to enhance recipes including various soups, stews, and proteins. The sauce brings life to a plate. Everything from the color to the many flavors within will command and maintain your attention because harissa is so vibrant and complex. You get bright bursts of spice, heat, pungent hints of garlic, earthiness and so much more. The sauce is often referred to as North Africa’s favorite hot sauce and it definitely is. Harissa originates from Tunisia, a country in North Africa, although Morocco is often given credit. The person responsible for this creation remains unknown as well as how long the sauce has been around but it can easily be made in the comfort of your own home.

!!!! Ingredients

  • 4 oz. dried red chilies, Guajillo, Arbol and Puya chilies are recommended
  • 1 teaspoon coriander seeds
  • ½ teaspoon caraway seeds
  • 1 teaspoon cumin
  • 4 garlic cloves
  • Salt, to taste
  • 2 tablespoons extra virgin olive oil or vegetable oil

How to Make !!!!?

!!!! Sauce – Step by Step Instructions:

1. Place the dried chilies in a heat safe bowl.
2. Bring a pot of water to a boil.
3. Pour the boiling water over the chilies.
4. Leave to soak for 30 minutes.
5. Grind the coriander and caraway seeds with a mortar and pestle or in a spice grinder.
6. Heat a small dry skillet over low heat.
7. Add the spices to the skillet.
8. Toast until fragrant. Stir to prevent burning.
9. Drain the chilies and reserve the liquid after the 30 minutes have passed.
10. Remove the stems and seeds of the chilies if desired (the seeds are where the heat is). Wear gloves to protect your hands.
11. Combine the chilies in a food processor with the spices, garlic cloves and salt.

It can act as a marinade or rub for meat, a dollop can be added to burgers before forming the patties, harissa doubles as a spicy condiment for chicken wings or you can whisk it into salad dressings. Chopped vegetables or pasta can also be tossed with harissa for added kick.
