  • 1 ½ lbs. fresh spinach
  • Olive oil
  • 2 shallots, diced
  • 2 garlic cloves, minced
  • ½ cup milk
  • 6 oz. cream cheese
  • ¾ cup shredded mozzarella cheese
  • 1 teaspoon soy sauce, reduced sodium
  • Salt
  • Black pepper

How to Make Spinach Dip?

Recipe for Spinach Dip with Cream Cheese – Step by Step Instructions:

1. Clean the spinach thoroughly.
2. Dry the spinach and carefully trim before giving it a rough chop.
3. Drizzle a little oil in a pan.
4. Add the diced shallots when the oil is hot and sauté for 3 minutes while stirring until they start to develop color.
5. Add the garlic and continue to cook while stirring for an additional 2-3 minutes.
6. Toss in the spinach as well as a little salt and black pepper.
7. Sauté for 5 minutes or until wilted.
8. Transfer the spinach to a colander.
9. Press to drain any excess liquid (you don’t want excess liquid to water down the dip).
10. Using the same pan used to cook the shallots, garlic and spinach, pour in the milk and bring to a boil over medium high heat.
11. Whisk in the cream cheese until it melts into the milk.
12. Return the spinach, shallots and garlic to the pan along with the mozzarella, soy sauce and a sprinkle of black pepper.
13. Whisk and reduce the heat to medium low.
14. Simmer until thick.
15. Season to taste and serve.
