  • 1 finely minced garlic clove
  • ½ yellow onion, finely diced
  • 2 jalapeno peppers, seeds removed
    and diced
  • 2 chipotle peppers canned in adobo,
    finely diced
  • 1 ½ cups half and half
  • 1 tablespoon cornstarch
  • 4 oz. softened cream cheese, cubed
  • 1 ½ cups cheddar cheese (use a
    blend, medium or sharp cheddar)

How to Make Queso Dip?

Mexican Queso Dip Recipe – Step by Step Instructions:

1. Drizzle oil in a medium saucepan over medium heat.
2. Add the garlic, onion and jalapeno pepper.
3. Sauté while stirring for 4 minutes or until softened.
4. Add the chipotle peppers. Stir and cook for an additional minute.
5. Pour in the half and half as you stir.
6. Whisk in the cornstarch and bring to a gentle boil.
7. Reduce to a simmer and stir in the cream cheese until melted.
8. Start adding the cheddar cheese in small increments so the dip can slowly come together.
9. Add an additional splash of half and half to thin out the sauce if needed.
10. Serve immediately. Queso dip must be served hot.
