Scampi sauce, the element that completes shrimp scampi, is a sauce made with garlic, onion, olive oil and some white wine. You will find it on the menus of numerous restaurants (with shrimp) and the dish is often garnished with parsley to enhance the flavor. Scampi sauce falls into the category of Italian cuisine but very few have had authentic shrimp scampi sauce. Some believe it is a buttery sauce while others know it as a tomato based one. The original recipe did not have shrimp at all but rather scampi which are small pale pink crustaceans. The sauce is incredibly easy but you do have to cook the shrimp since it is a primary flavor component.

  • 1 lb. shrimp, peeled and deveined
  • Salt
  • Black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon chopped onion
  • 2 garlic cloves, minced
  • ¼ cup dry white wine
  • Chopped parsley, for garnish

How to Make Scampi Sauce

Scampi Sauce Recipe – Step by Step Instructions:

1. Season the shrimp with salt and black pepper.
2. Heat olive oil in a large skillet over medium heat.
3. Add the shrimp when the oil is hot.
4. Leave shrimp to cook for 1 minute undisturbed.
5. Add the onion as well as the garlic.
6. Cook for an additional minute.
7. Turn the shrimp and cook undisturbed for 2 additional minutes.
8. Remove shrimp from the pan before pouring in the wine to deglaze.
9. Bring to a boil and cook for 30-45 seconds or until thickened a bit. Make sure to scrape the flavorful brown bits from the skillet.
10. Plate the shrimp, pour the sauce over the shrimp, finish with parsley and serve.

Shrimp scampi sauce pairs best with shrimp since it is required to get the sauce just right. Once the sauce is complete, just plate the shrimp with the sauce and dig in. If shrimp scampi isn’t what you’re after, you can toss almost any protein or vegetable in the sauce for serving.

Overall, scampi sauce is a delectable combination of olive oil, white wine, garlic and onion. As long as you use quality ingredients the sauce will reflect that quality. Butter isn’t traditional but is often substituted for the oil or used in conjunction with olive oil to get the best of both worlds. Lemon juice and zest are two other additions to consider adding to the sauce since both brighten and enhance. You can also leave out the onion or add more garlic if you wish.
