1. Drizzle the bottom of a large sauce pan with olive oil. Heat over medium.
2. Add the onion and garlic.
3. Cook while stirring occasionally until softened and slightly golden. This will take about 10 minutes.
4. Pour in the tomatoes along with the canning juices. Gently crush with a wooden spoon.
5. Bring to a boil over medium high heat.
6. Add the oregano, dried basil, some salt, and black pepper. Stir.
7. Reduce to a simmer.
8. Leave to simmer for 25-30 minutes or until thick.
9. Remove from the heat and adjust seasonings if needed. Finish with another drizzle of oil.
10. Garnish with fresh basil and cheese right before serving.
